Recipe: Healthy Scotcheroo

INGREDIENTS


  • 3 cups crispy rice cereal
  • 2 cups old fashioned oats
  • 1 cup flax meal
  • 3 Tbsp coconut oil, divided
  • 1 cup honey
  • 1 cup creamy peanut butter
  • 1 tsp vanilla
  • 1½ – 2 cups dark chocolate chips
  • course sea salt (optional)

METHOD


Step 1

In a large bowl mix together crispy rice cereal, old fashioned oats and flax meal. Set aside.

Step 2

In a small pot heat honey over low heat until boiling.

Step 3

Once it just begins to boil, add peanut butter and 2 Tbsp coconut oil, stir to combine and turn off heat.

Step 4

Stir in vanilla and pour over crispy rice mixture.

Step 5

Once it just begins to boil, add peanut butter and 2 Tbsp coconut oil, stir to combine and turn off heat.

Step 6

Melt chocolate and 1 Tbsp coconut oil in a double broiler.

Step 7

Pour over crispy rice and peanut butter mixture and spread until the top is coated.

Step 8

Sprinkle with course sea salt (optional) and let cool to harden.
